Summer Cucumber Salad Recipe

Serves 4
Ingredients
- 2 Large Cucumbers- diced
- 1/2 red onion- thinly sliced
- 3 large tomatoes- diced
- 1 cup Kalamata olives- chopped
- 2 tablespoons basil- chopped
- 2 tablespoons thyme- chopped
Dressing Ingredients
- 2 TBSP Balsamic vinegar
- 2 TBSP Red wine vinegar
- 1 Lemon- juiced
- 1 tsp Lemon zest
- 1/2 cup Extra Virgin Olive Oil
- 1 tsp sea salt or Pink Himalayan salt
- Dash of black pepper
Instructions:
In a large salad bowl, mix together the main ingredients: cucumbers, red onion, tomatoes, olives, basil, and thyme.
In a separate bowl, whisk together the red wine vinegar, balsamic vinegar, lemon zest, lemon juice, salt, and pepper until thoroughly combined. Pour the olive oil slowly into the dressing mixture, whisking to combine.
Pour the dressing over the salad. Chill for an hour if you wish or simply Serve & Enjoy!
